TOTONACAPAN’S GASTRONOMY

Nowdays the way of cooking hasn’t changed much, speaking of the content and the making, because the local people keep ingesting the traditional atoles, quelites, tamales and the “meat of the mountain”.

Among the dishes that are common in the Totonacapan are the purple corn atole, the chili sweet atole, jobo’s atole, capulín’s, burn tortilla’s, beans and corn’s, pork and coriander’s tamal, beans in guatape or pozole, fried ortiga’s flower, izote’s flower pipian, fish and egg scone, mamey’s seed enchiladas and several deserts.

Before sitting at the table, the totonaca people wash their hands, for that they place a hand wash at the entrance gate of the house or kitchen, and sometimes, when the leader of the family arrives from the field, he must take a bath before eating, and the food must always be fresh and recently cooked.
